After making the Pasta salad, I had quite a lot of vegetables left, so the next day I used them and some other leftover vegetables from previous meals to make this healthy lunch salad. I don’t like wasting food, so this was a nice way to use it all up.
I included some rocket leaves, cherry tomatoes, cucumber and avocado. The only thing I did was cutting every into small pieces. Then I drizzled some of the balsamic dressing over it. Mixed it a little bit and it was ready to eat.
