Inspiration: Salad with bulgur, sweet potato and halloumi

image

After making the chickpea burger, I had quite a lot of sweet potato and lettuce left. I don’t like to waste food, so I decided to incorporate these ingredients in a salad to take with me the next day. I eat at the dance studio between classes on thursdays and I always like to have some kind of salad. I also had a bag of bulgur and quinoa from Zonnatura which you only have to heat for 2 minutes in the microwave and wanted to use that as well. So I got a bit creative this time and added pomegranate seeds, pecans and grilled halloumi to the salad. Lees verder

Inspiration: My Christmas dinner menu’s so far

image

Christmas is approaching and it will be just two more weeks untill all the festivities in my family start. Actually, even less than two weeks, because we also host a dinner on Christmas eve with some of our relatives. Then we have first day of Christmas with my mothers’ side of the family and then second day of Christmas with my fathers’ side of the family. For the non-Dutch reader: we really have two official days of Christmas in the Netherlands. It can be convenient if you have multiple groups of people to celebrate Christmas with, like me. And then we still need an extra celebration on Christmas eve, because we can’t fit it all in two days. So I am planning the menu’s and dishes as we speak. I love to try new, delicious, crowd pleasing recipes, but sometimes it can be a struggle to find recipes everyone likes when you are cooking for larger groups. In fact, our numbers are: 8 people on Christmas eve, 15 on the first day and 19 on the second day. On the first and second day, we usually organise it in a way where every family member makes a part of the dinner and takes it to the host where it may be finished or heated before we actually eat. We haven’t discussed the menu’s for those days yet, but I have already seen some great recipes I would like to make.

Inspiration: 10 times fruit in your oatmeal (the realistic way)

image

I’m seeing the most amazing photos of jaw dropping breakfast bowls with uncountable kinds of ingredients on Instagram every day. A lot of different fruits, nuts, superfoods, sprinkles, colors and whatnot are added in these breakfasts. Everything is perfectly cut and nicely shape and arranged in layers and patterns. The pictures alone are mouthwatering pieces of art. But realisticly, as much as I want it to, my breakfast almost never looks as great, not even close (even while it has the same ingredients sometimes). Simply because I don’t have the time to cut fruit in a creative way, or puff some rice or amaranth every day. And if it is very early, I don’t even care how my oatmeal looks, as long as it tastes goodThis is why I decided to share 10 of my regular, ready in 2 minutes oatmeal and fruit breakfasts. Some still look ok, others plain boring, but most important is how they tasted. I really liked all of these combinations.

Inspiration: typical Dutch ‘Hutspot’

image

When the days are getting shorter and colder, the Dutch start to feel like eating ‘stamppot’ again. It provides a sturdy meal that can keep you going for a long time. Basically a ‘stamppot’ is mashed potato with vegetables of some kind mixed through it. There are a number of typical Dutch stamppotten, like with kale, sauerkraut or endive. But the one that is my personal favorite is the one with carrots and onions called ‘Hutspot’.

Inspiration: Chia pudding

image

Chia seeds are one of the current trending foods and they are very versatile in the way you can use them. Because of their ability to soak up fluids and them creating a kind of jelly around themselves you can easily make a out pudding of them. Just let them soak overnight and you will have a lovely pudding in the morning. You will have a tasty, healthy and filling breakfast. The possibilities are endless as you can bring any flavor you want to it.

Inspiration: Smoked Salmon Roll-ups

Smoked salmon roll upI always feel like I need to serve something savoury when I have friends or family over around lunchtime, but when you ask them if they want a sandwich, they usually say no or sometimes even, they decide to leave (and have lunch at home). There is something most of my guests don’t decline when I offer it to them and it is a Smoked Salmon Roll-up.
